A Downton Dinner: Garlic Plugged Rosemary and Port Pork Roast

As you are well aware of, the food used at the Abbey's were either raised at the Abbey itself or from one of the nearby farms. One of the more popular meat features at the Abbey's was pork (and who can ever forget Lady Mary's visit to the local pig farm).

This dish, Garlic Plugged Rosemary and Port Pork Roast, was a favorite of the Downton era. As with most of the dishes prepared at the Abbey's, it is quite simple. What makes it special, is how it is prepared. You have a wonderful pork roast (always boneless as you don't want your guests to have to cut around a bone). You have some port wine (quite sweet) and some herbs from the garden right outside the kitchen.

When this dish was served at the Abbey's, the meat was always sliced very thin. The reason for this is quite simple. It was easier for the guests to cut without the piece of meat slipping over the plate.
