Simple, Quick and Delicious! Asian Orange Chicken

Asian Orange Chicken

There is a magic which happens in your wok when you combine citrus and chicken. You get a flavor combination which cannot be beat and the natural citric acid is a natural meat tenderizer. Asian Orange Chicken is a classic dish at many Asian eateries and for good reason, it is simply delicious and even better it is quick and easy to make at home!

INGREDIENTS NEEDED TO MAKE ASIAN ORANGE CHICKEN:

2 chicken thighs, boned, skinned and thinly sliced; 1/2 cup flour; salt and pepper to taste; 3 Tbs. peanut oil; 1 orange, the juice and grated zest; 1 Tbs. honey; 1 tsp. cornstarch.


Steps:
1) Season the chicken with salt and pepper and then dredge (coat) in the flour.
2) Heat the oil over medium-high heat in a wok.
3) Place the chicken in the wok and stir-fry 5 minutes.
4) In a small bowl, whisk the orange juice, orange zest, honey and cornstarch.
5) Add the orange mixture into the wok and stir-fry 4 minutes.
6) Served over grated zucchini (as in the picture) or steamed rice.

The Exotic Tastes of Asian Bread: Asian Sweet Chili Hoisin Garlic Bread

Whomever said that breads cannot be downright delicious has never tried Asian Sweet Chili and Hoisin Garlic Bread. You have a flavored crust which is almost addictive and a soft delicate dough. It is also a bread which is extremely easy to make at home and you don't need any special ingredients or tools (other than your hands).

INGREDIENTS NEEDED TO MAKE ASIAN SWEET CHILI AND HOISIN GARLIC BREAD:
2 tsp. yeast; 1/4 cup warm water; 1 Tbs. sugar; 2 cups flour; 2 Tbs. cornstarch; 2 tsp. salt; 3/4 cup water; 1 Tbs. Asian sweet chili sauce (Mae Ploy); 1/2 tsp. hoisin sauce; 1/4 tsp. soy sauce; 2 cloves garlic, minced.


STEPS:
1) Into a small bowl whisk the yeast, warm water and sugar. Let the mixture sit 5 minutes to proof (foam).
2) In a large bowl, stir the proofed yeast, flour, cornstarch, salt and water to make a dough.
3) Place the dough on a floured surface and knead 5 minutes.
4) Place the dough back into the bowl, cover and let rise 1 hour.
5) In a small bowl, whisk the Asian sweet chili sauce, hoisin sauce, soy sauce and garlic.
6) Remove the risen dough from the bowl and form into 4 balls.
7) Place the dough on a baking sheet and with a sharp knife, make a slit or two on top of the dough.
8) Brush the tops of the dough with the with the Asian sweet sauce mixture and let the dough rise 30 minutes.
9) Pre-heat your oven to 400 degrees.
10) Brush the dough with some more sauce, place into the oven and bake 20 minutes.
11) Let the bread cool on a wire rack until ready to eat.

Warm the Body and Spirit: Sesame Shrimp and Bok Choy Soup

Sesame Shrimp and Bok Choy Soup!

As half of the world is under the influence of winter, a good and hearty soup is always the answer to warm the body and the spirit. Loaded with the healthy and fresh flavors of Asia, this Sesame Shrimp and Bok Choy Soup is both simple and rather elegant.

INGREDIENTS:
2 cups chicken stock; 4 bok choy, stem end removed; 2 scallions, minced; 8 mushrooms, sliced; 1/4 pound shrimp, peeled; 1/2 tsp. toasted sesame oil; 1/2 tsp. toasted sesame seeds.


STEPS:
1) In a medium pot, bring the chicken stock to a boil.
2) Add the bok choy. Lower the heat to a simmer and cook the bok choy 5 minutes.
3) Add the scallions, mushrooms and shrimp and cook 5 minutes.
4) Ladle the soup into serving bowls.
5) Drizzle the soup with the sesame oil and sprinkle with the sesame seeds just before serving.

Tempting Teriyaki! Sesame Teriyaki Chicken

SESAME TERIYAKI CHICKEN!

Nothing pleases the mouth quite like biting into a tender piece of chicken which is lightly enhanced with the slight sweetness of teriyaki. Even better is the fact that in the case of Sesame Teriyaki Chicken, it only takes minutes to prepare!

INGREDIENTS NEEDED TO MAKE SESAME TERIYAKI CHICKEN:
1/4 cup soy sauce; 1 clove garlic, minced; 1 tsp. grated ginger; 2 Tbs. honey; 1/2 tsp. Chinese 5-spice powder; 2 Tbs. peanut or vegetable oil; 4 chicken thighs, skinless and boneless and cut into strips; 2 scallions, chopped; 1 Tbs. sesame seeds.


STEPS:
1) In a medium bowl, whisk together the soy sauce, garlic, ginger, honey and 5-spice powder.
2) Place the chicken into the teriyaki marinade and marinate 30 minutes at room temperature.
3) Heat the oil in a wok over medium-high heat.
4) Add the chicken to the wok and stir-fry 5 minutes.
5) Add the scallions and sesame seeds and stir-fry 2 minutes.
6) Serve over some steamed rice and ENJOY!

Make a Memorable Meal is 15 Minutes! Vietnamese 5-Spice Swai

VIETNAMESE 5-SPICE SWAI

If you have about 15 minutes of time and want to fix a memorable meal, try this exotic dish from Vietnam featuring one of the most popular fish on the market (and inexpensive) called swai.

INGREDIENTS NEEDED TO MAKE VIETNAMESE 5-SPICE SWAI:
2 swai fillets; 1/2 cup flour; 2 tsp. Chinese 5-spice powder; 1/4 cup peanut oil; 1 zucchini, cut into julienne strips; 1 Tbs. toasted sesame oil; 1 Tbs. hoisin sauce; 1 tsp. soy sauce; 2 handfuls yakisoba noodles; 1 tsp. toasted sesame seeds.


STEPS:
1) Cut the swai fillets into serving pieces.
2) In a small bowl, whisk the flour and 5-spice powder. Dredge (coat) the swai in this mixture.
3) Heat the peanut oil in a wok over medium-high heat. Add the swai and stir-fry 5 minutes.
4) Add the zucchini and sesame oil and stir-fry 3 minutes.
5) Add the hoisin sauce and soy sauce and stir-fry 1 minute.
6) Add the yakisoba noodles (which you buy pre-cooked) and stir-fry 2 minutes.
7) Place on a serving plate, sprinkle with sesame seeds and ENJOY!

A Quick and Delicious Weekend! Chinese Ginger Chicken

CHINESE GINGER CHICKEN!

A little sweet! A little savory! A lot delicious! Simple to make at home in only a few minutes.

INGREDIENTS: 2 chicken thighs, skinned and boned; 1 Tbs. soy sauce; 1 Tbs. honey; 1 Tbs. sesame oil; 1 Tbs. grated ginger; 1 Tbs. peanut oil; 2 scallions, minced.

STEPS:
1) Cut the chicken thigh meat into thin strips.
2) In a small bowl make the marinade by whisking together the soy sauce, honey, sesame oil and ginger.
3) Place the chicken in the marinade and let marinate 30 minutes at room temperature.
4) Heat the peanut oil in a wok over medium -high heat.
5) Add the chicken to the wok and stir-fry 5 minutes.
6) Add the scallion and stir-fry 2 minutes.
7) Serve with steamed rice and vegetables and ENJOY!

Experience the Exotic Flavors of Thailand: Thai Coconut Braised Chicken

THAI COCONUT BRAISED CHICKEN!
Ingredients: 6 chicken legs; 1 Tbs. vegetable oil; 2 Tbs. butter; 4 scallions, chopped; 2 cloves garlic, minced; 1 zucchini, halved and thinly sliced; 1 cup chicken stock; 1 12-ounce can coconut milk; 1 Tbs. honey.

STEPS:
1) Season the chicken with salt and pepper.
2) Heat the oil in a medium pan over medium heat. Add the chicken and brown on all side.
3) Remove the chicken from the pan and set aside. Into the pan add the butter, scallions, garlic and zucchini and saute 5 minutes.
4) Stir in the chicken stock and mushrooms and bring to a boil.
5) Lower the heat to a simmer. Put the chicken back into the pan. Stir in the coconut milk, cover and cook 30 minutes.
6) Stir in the honey and serve!

A Fresh and Healthy New Year: Vegan Sprout Chow Mein

Whomever said vegan or vegetarian food is boring has never experienced the full flavors of Asian cooking. With the start of a New Year, it's time to enjoy the fresh flavors of Nature and take care of your personal temple, your body!

This is my personal favorite chow mein. It is a cornucopia of full-flavors and truly exemplifies all the vibrant textures of Nature. It is a chow mein which uses beansprouts instead of noodles. It is also very simple to make at home, takes around 10 minutes from wok to plate and will cost you very little money.

INGREDIENTS NEEDED TO MAKE VEGAN SPROUT CHOW MEIN:
1/3 cup water; 2 small zucchini, thinly sliced; 1/4 pound asparagus, cut into 1-inch pieces; 2 cloves garlic, minced; 3 cups beansprouts, rinsed; 4 baby bok choy, root end removed; 1 tsp. sesame oil; 2 Tbs. hoisin sauce; 2 tsp. soy sauce.

A Fresh Taste for a New Year: Baby Scallops with Mango Cream

Whomever believes that a sensational and elegant meal needs to take hours to prepare and tons of ingredients has never set foot into an Asian kitchen. With a few ingredients and about 10 minutes of time, you can be enjoying this delicious Baby Scallops with Mango Cream for dinner tonight!

Whereas large scallops can be quite pricey at the market, baby scallops are very inexpensive and actually more tasty than their larger counterparts. They also cook in only a very few minutes and their natural flavor and texture go beautifully with this very simple mango cream.

INGREDIENTS NEEDED TO MAKE BABY SCALLOPS WITH MANGO CREAM:
2 Tbs. melted butter or ghee; 1/2 pound baby scallops; 1 Chinese sausage, thinly sliced; 1 scallion, minced; 2 Tbs. minced Thai basil; 1 Tbs. sweet chili sauce (Mae Ploy); 1 mango, peeled, pitted and pureed; 2 Tbs. cream.

Start the New Year Sweet and Healthy: Lemon Balm and Thai Basil Banana Bread

There is not a better way to start a New Year than with something sweet and quite healthy. All of your cravings accomplished with one very simple preparation and leave it up to the amazing Thai people to have such a dish: Lemon Balm and Thai Basil Banana Bread!

Whereas herbs in dessert breads is not too common within the United States, it is a very popular thing to do throughout Asia. Lemon balm is a wonderful herb with many medicinal attributes and the slight flavor of lemon. Thai basil is a rather spicy basil with a little stronger taste than the usual basil. You can find both at your local market or even better, you can grow your own very easy.

This is a very simple dessert bread to make at home and also freezes quite well when wrapped in plastic wrap and then foil.

INGREDIENTS NEEDED TO MAKE LEMON BALM AND THAI BASIL BANANA BREAD:
4 very ripe bananas, mashed; 1/4 cup melted butter; 1 cup sugar; 1 1/2 cups flour; 1/4 tsp. salt; 1 egg, beaten; 6 lemon balm leaves, minced; 5 Thai basil leaves, minced.
