Sesame Shrimp and Bok Choy Soup!
As half of the world is under
the influence of winter, a good and hearty soup is always the answer to
warm the body and the spirit. Loaded with the healthy and fresh flavors
of Asia, this Sesame Shrimp and Bok Choy Soup is both simple and rather
elegant.
INGREDIENTS:
2 cups
chicken stock; 4 bok choy, stem end removed; 2 scallions, minced; 8
mushrooms, sliced; 1/4 pound shrimp, peeled; 1/2 tsp. toasted sesame
oil; 1/2 tsp. toasted sesame seeds.
STEPS:
1) In a medium pot, bring the chicken stock to a boil.
2) Add the bok choy. Lower the heat to a simmer and cook the bok choy 5 minutes.
3) Add the scallions, mushrooms and shrimp and cook 5 minutes.
4) Ladle the soup into serving bowls.
5) Drizzle the soup with the sesame oil and sprinkle with the sesame seeds just before serving.
