Whomever said vegan or vegetarian food
is boring has never experienced the full flavors of Asian cooking. With
the start of a New Year, it's time to enjoy the fresh flavors of Nature
and take care of your personal temple, your body!
This is my
personal favorite chow mein. It is a cornucopia of full-flavors and
truly exemplifies all the vibrant textures of Nature. It is a chow mein
which uses beansprouts instead of noodles. It is also very simple to
make at home, takes around 10 minutes from wok to plate and will cost
you very little money.
INGREDIENTS NEEDED TO MAKE VEGAN SPROUT CHOW MEIN:
1/3 cup water; 2 small zucchini, thinly sliced; 1/4 pound asparagus,
cut into 1-inch pieces; 2 cloves garlic, minced; 3 cups beansprouts,
rinsed; 4 baby bok choy, root end removed; 1 tsp. sesame oil; 2 Tbs.
hoisin sauce; 2 tsp. soy sauce.
