A Salad to Remember: Thai Spicy Shrimp Spinach Salad

A salad for dinner? Of course! It is a wonderful and healthy choice if the salad is prepared properly and contains all of the nutritional elements of a dinner and this Thai Spicy Shrimp Spinach Salad does just that. You have protein, vitamins, minerals and little fat and... it is delicious!

When cooking with spinach, an incredible vegetable loaded with vitamins, minerals and the ever important calcium, you must remember that it cooks down about 80%. Here we are using 8 cups of packed spinach leaves which, once cooked, will feed 2 people.

The shrimp for this dish are going to be prepared in a very old and simple Asian way. They will first be marinated, to give them the Thai flavor. Then they will be dredged (coated) in cornstarch, which will help protect the meat during the frying stage and give them a delicate crunch when you bite into them.

This is a very simple and quick dinner salad to make at home!
