Breakfast with an Asian Bang! Cambodian Scrambled Eggs

You have probably heard the saying "breakfast is the most important meal of the day." There is some truth in this statement but it all depends on what you're enjoying for breakfast. Throughout Asia breakfast is an important meal and... it is never boring!

Once you try Cambodian Scrambled Eggs, you will never yearn for the boring scrambled eggs of your past. Here you have a scrumptious egg dish which is brimming with flavor and from a nutritional point, a perfect way to start your day.

In Asia they will add smoked or cured minced pork (usually pork belly). You can use bacon as bacon is the belly of the pig. If you are lucky enough to have an Asian market near you, you can also use a Chinese sausage which has been minced.

The secret to a perfectly scrambled egg is to slightly under-cook the egg. You want the egg to be creamy. It is very important to remember, that once you remove the pan from the heat, the egg is still cooking.

When you're presented this dish in Cambodia, they will give it a few dashes of hot sauce and Cambodian hot sauce will definitely wake you up!
