The Flavors of Java: Bandung Pork and Asparagus with Rice Noodles

Located in the western region of Java sits the capital city of Bandung. It is the third largest city in Indonesia and one of the culinary hot-spots of the area. Aside from some outstanding restaurants for the tourists, they also have some incredible street foods for the locals. This dish, Bandung Pork and Asparagus, can be found at both types of eateries.

The food of Indonesia is a wonderful combination of both sweet and savory and in many cases, they do have a tendency to toss in a little spicy heat. If you were to eat this dish from a street vendor, it would be served with rice. At a restaurant, it would be served with rice noodles.

To make sure your asparagus is properly prepared for this stir-fry dish, you first want to parboil it. This simply means to place the asparagus in boiling water for a few minutes and then removing it to a bowl of ice water to stop the internal cooking process. For best result you do want to use thin stalks of asparagus as they are more tender.
