Desserts Can Be Healthy: Malaysian Spiced Mango Bread

In America one of the most popular dessert breads is the classic Banana Bread. In the tropical sections of Asia they have their own special dessert bread and it features the lush sweetness of mangoes and the perfect touch of spice with some ground cinnamon.

When preparing this dish you can use any variety of mango. You can also use mangoes which are slightly unripe since the baking of the bread (the heat) will breakdown the fibers of the mango and make the pulp (fruit) soft. Unlike Banana Bread, Malaysian Spiced Mango Bread does not freeze well, so it is best to make this one loaf at a time.

You might notice something strange while making Malaysian Spiced Mango Bread and that is the fact in contains no dairy fat (ie. milk or butter). The batter is held together by olive oil and eggs! This is yet another reason why Asian cuisine is considered one of the worlds healthiest.

This is a very easy dish to prepare at home and a great way to start your day with a cup of strong coffee or tea.
