Classic Chinese: Mung Bean Chow Mein

At most Chinese or Asian eateries in the United States, the chow mein is made with what is commonly referred to as chow mein noodles. The Asian fact of the matter is, there are no noodles actually called "chow mein noodles." If, for instance, you were to enjoy chow mein in China or somewhere throughout Asia, your chow mein would probably not have noodles. 

What it would have are mung bean sprouts. What are mung bean sprouts? They are sprouted mung beans and are the very same "beansprouts" you find every day at your local market.

This is a delightfully healthy and nutritious chow mein and makes for a wonderful main course when serves with some steamed rice.
