Since chili oil is used as a
flavor enhancer and not used to stir-fry, you can use a good quality
vegetable oil. As far as the dried peppers (flakes) are concerned, any
type of hot pepper will work just fine.
Once you have made and bottled your
chili oil, add a few whole dried chili's to the bottle. It not only looks
good but it will also let you know it is chili oil (this can be hot,
you don't want to add it to a dish by mistake).
