There are three basic culinary genre's

dish, we will venture into the Hunan style of Chinese food, which means
we will have a combination of slightly sweet and very savory.
When it comes to preparing a whole chicken, the Chinese have a special
way of making sure the chicken is full-flavored and cooks quicker
than usual. The full-flavor part comes from the fact they "score" the
skin of the chicken. This simply means they do shallow cuts into the
chicken through the skin before they marinate it. The quick cooking time
comes from the fact they will usually split the chicken, which is
basically removing the backbone, and this reduces the cooking time.
