From the Spicy Side of China: Szechuan Shrimp and Asparagus

One of the favorite cuisines of China is Szechuan. The reason for it's popularity is the fact it is one of the spicier cuisines of China. At Fusion Asiana we have taken this aspect of Szechuan cuisine and fused it with some of the culinary aspects of Thai cuisine and what we came up with is this delicious entree we called Szechuan Shrimp and Asparagus.

When adding the asparagus to this dish, you want to make sure it is parboiled. This simply means to boil the asparagus for 7 minutes and then place it into a bowl of ice water (this will immediately stop the cooking process). Your asparagus will retain both its color and flavor.

You can serve Szechuan Shrimp and Asparagus either over steamed rice or yakisoba noodles and accompany it with an Asian sweet plum wine.
