You may have seen swai at your local
market. It is becoming quite popular in America. Swai is a Vietnamese
catfish. Last week on this page we told you a little about this very
affordable fish and today we'll share with your a dish featuring swai.
Though swai is in the catfish family of fish, it's texture is not as
fleshy as catfish. When prepared properly, swai is rather delicate. A
swai fillets texture can best be described as being like a thicker
fillet of petral sole.
This dish is a fusing of Vietnamese and
Laotian food. Authentically you would want to make the glaze with
tangerines (quite a popular fruit is Southeast Asia) but if you cannot
find tangerines at your local market oranges can be substituted.
