Those who think salads are boring have
never traveled throughout Asia. Whereas in many American restaurants a
salad is really nothing more than rabbit food topped with industrial
sludge (dressing), throughout Asia many salads are actually a work of
art -- edible art!
One of the favorite ingredients in many
Asian salads is a rather ugly vegetable called a daikon radish (also
known as a Japanese radish). It is a long white tuber that does taste
like a mild domestic radish yet with a tad of natural sweetness. Most
supermarkets carry daikon radishes in their produce section.
To
make this salad, Chef Larry Edwards will take you through the steps on
ribboning the daikon radish. It is quite easy and all you'll need are a
vegetable peeler and a knife. Once the daikon radish is ribboned, you
make the salad and top it with a very special and delicious Sweet Ginger
Sesame Dressing.
