Classic Asian: Chicken Satay with Spicy Peanut Sauce

If you happen to be a fan of Asian street foods, you have no doubt enjoyed your share of the classic Chicken Satay. No matter what part of Asia you may have visited, the aroma of Chicken Satay will be wafting through the streets.

What Chicken Satay is, is a grilled marinated chicken. Authentic Chicken Satay will be slices of chicken thigh. The reason the thigh meat is used is two-fold: first, it is inexpensive and secondly, it is one of the more flavorful  parts of the bird..

There are two ways to prepare Chicken Satay. First, you can cut the thigh meat into strips and then lace them onto skewers and grill them. The other way (and the way we've done it in the pictures) is to simply grill the whole marinated chicken thigh and then slice it and spear it with toothpicks.

Chicken Satay is always served with a dipping sauce. The most popular Asian dipping sauce is a wonderful spiced Peanut Sauce, which attains its smooth texture by heating it with coconut milk.
