It is the time of the year when people
think grilling and if you want some truly special grilling, you might
want to try this delicious Japanese Glazed Grilled Salmon.
Grilling is very popular throughout Japan. It doesn't matter if it is
beef, pork. chicken or seafood -- if it is grilled Japanese style, it is
going to be memorable. One of the secrets of Japanese grilling is the
fact they usually glaze what they are grilling. This gives the dish not
only a wonderful color but also a deep and rich flavor.
When it comes to grilling seafood
(fish) the secret to perfection is simple. You grill the fish with the
skin on and you have the skin-side facing the heat for 90% of the
cooking. The skin will protect the meat (flesh) and keep it moist. You
can serve the grilled fish with the skin on (as they do in Japan) or
remove it once you turn the fish over (see the pictures).
The glaze we are using is a basic Japanese sweet ginger glaze. You can use this glaze for any food you grill.
