The Vibrancy of Flavor: Ginger Garlic Chicken with Melon

As most are aware of, the cuisines of Asia are among the healthiest in the world and one of the reasons why is the combination of vegetables and fruit included in many dishes. A perfect example of this is Garlic Chicken with Melon.

You can use either the dark or white meat of the chicken to make this dish. At Fusion Asiana we prefer to use chicken thighs (dark meat) as it is more flavorful. You can also use the melon of your choice. We opt for cantaloupe melon as it is more colorful and currently in season.


 If you can't find baby bok choy at your market, you can use gai lan (Chinese broccoli) or shredded Napa cabbage (Chinese cabbage). This is a very simple and quick dish to prepare at home.
