Savory, Sweet and Refreshing: Pickled Mango

It doesn't matter what you may be grilling this Summer, you will want a side-dish which perfectly matches the spices and flavors and also adds a touch of freshness. Pickled Mangoes is a favorite side-dish in many Asian countries and it is very simple to make at home (although it does have a 24-hour marinating period).

When choosing your mangoes for this dish, you will want them to be slightly under ripe. Meaning, you'll want your mangoes to be rather firm to the touch. This is important as the ingredients the mangoes will be marinating within will breakdown their fiber.

You can use any type of vinegar for this recipe. I would not recommend, however, using a balsamic vinegar for two reasons: first, the dark color will take away from the vibrancy of the mangoes and secondly, balsamic is rather sweet and you want the only sweetness to come naturally from the mangoes.
