Fusing Chinese and Korean Cuisines: Braised Sweet Black Bean Chicken

From the kitchens of Fusion Asiana we bring you a dish which fuses the cuisines of China and Korea and features a condiment quite popular in Asian cooking... black bean paste!

You can find black bean paste (sauce) in the Asian section of most supermarkets and all Asian markets. It is simply a fermented black bean mixed with some spices and soy sauce. It also contains a little alcohol, so be warned if you have an alcohol-related illness.

This dish is best when chicken legs are used. As per the Asian way of preparing chicken legs, we will remove the elongated bone (see the picture) before cooking the chicken. This dish is braised (meaning cooked in liquid), so your chicken meat will be moist and tender.
